## The steps

1. **Manage 95 percent to the penny.** Negotiate hard and control costs on everything the guest does not notice.
2. **Spend the last 5 percent foolishly.** Splurge on the one detail, such as a tiny blue spoon, a rare final wine pairing or a team retreat, that transforms the experience.
